Recipe Development for the New Year & Spoke 'n' Beans!
Hey everyone!
I just wanted to keep you in the loop--I'll be back in Blacksburg January 8th. The week before classes, I'm going to be working on developing some new recipes (I made a killer pumpkin cheesecake over break) and reworking some older ones to reflect ingredient price changes and seasonality. I just got a standmixer for Christmas, and I'm SUPER EXCITED to start using it, too.
Also! I just partnered up with Spoke 'n' Beans (http://www.spokenbeans.com/static/index.html). You can now place bakery orders through me, and they'll deliver them to you by bike! Just indicate you'd like delivery by Spoke 'n' Beans when you post your order. Be sure to order some of their fair trade coffee or even farmers market items, too! I'll be making some of their mason jar covers for sale as well!

New Menu Items, Plastic Baggie Request, & Open Orders!
Hey Everybody,
First of all: I NEED BAGS! If anyone *coughCORYcough* has extra produce bags or twist ties or baggies from the bulk section at Eats or wherever---PLEASE BRING THEM TO ME. This helps me keep costs as well as plastic waste low. As of right now, no customers have nut allergies, so it'll be okay if it contained nuts once upon a time.
You can place an order any day of the week. I only ask that you give me at least 2 days to make it (for example, order on Wednesday for pickup Friday). I get a notification when anyone posts and will send a confirmation email when I get it.
Would anyone be interested in sweet breads like Apple or Banana Walnut? I intend to buy the fair trade bananas from Eats. Also, what about Donuts? Put a response in your post.
A note on the peaches: they will be local as long as my store of frozen holds out. If anyone has frozen local peaches and wants to make a trade, let me know!
ALSO also, if you ever want to give a baked good as a gift, I can wrap it up for you and make it nice and pretty for small charge, depending on size.

From now on, you can PLACE ORDERS EVERY DAY. I only ask that you give me at least 2 days to make it (for example, order on Wednesday for pickup Friday). I get a notification when anyone posts and will send a confirmation email when I get it.

Week 3 Orders!
Hello, there.
First, sorry for the delay in posting! I'm currently in Richmond at my sister's, and I tend to get lost in playtime with my near-20 month old nephew. All right. Down to biz.
Okay, so maybe I went a little nuts last week trying to make everyone's orders and balance that with class and my other job. Nine hours in the kitchen on Monday nights doesn't always jive with my schedule. So. I propose a small change.
Instead of a restricted order/pick-up date, what about if we have an open order date with one stipulation: give me at least two days to make it? Ex: If you want something for Wednesday, order by Monday. The only exception will be bagels, which will continue to be made for Tuesdays. (Because this post is late, you've got til Monday at 3pm to order).
Another update: I can now do cakes! They'll be made to order and I'll give you a price estimate based on what you want. Pictures will follow soon---I made a chocolate cake with mixed berry filling and a black raspberry-green tea whipped cream frosting cake for Cara's cousin's baby shower this weekend!

Man, I have missed baking on a regular basis. I'm going to start this semester off right with Bagel Tuesday! Post your orders as a reply to this post and PLEASE INCLUDE ANY FOOD ALLERGIES if you are new to this service. Week 6!
Hellllllo everybody!
I made a decision about the bagels! Their pick-up day will be Wednesday. Everything else is going to be Tuesday. Starting Wednesday, I'm going to be house-sitting down 460 West, so it's really important that you get in touch with me about bagel pickup. I'm planning on being at the student garden from 4 until 7ish on Wednesday, so that would be an ideal time if you can make it. Other than that, you can pick up at my work at the OIRED from 9 to 3.

Week 5!
Hiiiiiiiiii.
I'm going to be out of town this week, so the bread CSA is postponed for one week! Place your next orders around Sunday July 10th. I'll put up a post for orders around then.
If you like, you can use this post to put down any comments or suggestions so far about the breads and such. I've gotten a lot of raves in emails... I'm thinking about posting them here, too.
Maybe some things you would like made that I'm not currently making?
I have a question, too: when you all get sammich loaves, are they effective for sammiches? Are you using them for sammiches or just for dipping, etc?

Week 4!
Hey everybody!
I don't know about you guys, but I think last week was pretty epic. I just got engaged, so there is a LOT of joy in those goodies!! I'm super proud of those bagels--hopefully you all enjoyed them!

A couple updates:
- I re-did the recipe for the Honey Whole Grain loaf. It's much lighter and lovelier now and also available in sandwich rolls (which I have been nomming like crazy they are so good).
- I also have a new recipe for Tomato Basil bread that's pretty fantastic.
- A new dessert includes mini tarts with local raspberries, blueberries, and foraged black raspberries I've been finding around Blacksburg in a shortbread crust. In other words, an immediate foodgasm.
- Finally, going back to the bagels... those are incredibly time intensive and I only got 4 big ones out of the recipe for 6. Two options: smaller bagels @ 4 for $4 or keep the same size and do $5 for 4. What seems reasonable to you guys? I can't make them if you won't buy them and I love making them :) Leave your comment in your order post.

I did a test here, and my items started to mold at 5 days. Please have orders in by Sunday night. I'm going to visit my sister in Richmond this weekend, so we shall do Sunday order deadline and Tuesday pickup from now on. I think week days might work well for most folks anyways with travel and all. If not, shoot me an email or text (814.873.2580) and we can most certainly work something out. Once more, all things are $4 unless noted.

I'm getting the whole wheat flour from Eats, the Oat Flour (Bob's Red Mill) from Kroger, the rosemary and lavender either from the farmers market or my plants, thyme and sage from my plants, garlic from Kroger, strawberries from the farmers market or Oasis, rhubarb from my Grandma Madoline, and the honey from a beekeeper who lives about 45 minutes away from my house in PA.
Would anyone be interested in pierogies (potato-cheese filling) or even ravioli ( ricotta-asiago-basil filling)? I can make them from the same type of dough. My Grandma's Czech, and she taught me well :) Let me know and I can look up some prices for you guys. Also, I'm planning on heading up to PA for the 4th of July and could probably hunt down some Pennsylvania maple syrup if anyone's interested in that, too. There's at least 2 maple syrup "farms" within an hour of my house.

Ingredients and Responsible Sourcing
This is part of a conversation I had with Spencer:
Spencer: I’m curious if you try to use organic and/or local ingredients when you can. I know that would be more expensive but would add to the sustainability factor.
Me: Yep. When I said "responsibly" I meant I would consider all aspects of the food production and procurement. The majority of the fruits for pies and such will either be local or be purchased from a local vendor (such as the Hethwood Market near Foxridge, which has peaches now, or The Green Market at the farmers market which sometimes acts as more of a distributor). I always take into consideration which industry I want to support. Usually, local beats out the Big Organic stuff, because it's just as wasteful and industrial as conventional.
In regards to flours, Big Spring Mill (the local brand), uses a soft winter wheat which is unsuitable for bread but good for cakes and muffins and such. I plan on using both the flour (relatively local and a good price) available at Eats and King Arthur brand to do my breads.
My eggs are all local. I worked on a farm two summers ago and basically fell in love with the chickens there. Haha, I feel like they would disown me if I bought store eggs now. My dairy will either be from Duchess (purchased at Oasis or Hethwood Market) or Homestead (likely purchased from Kroger).
When I get into making the more elaborate pies and cakes and such, I'm going to consult with you guys first on prices and such. I can't make something that people can't afford to buy.
If you'd like, I can give you a listing of origin of the ingredients that go into your item(s) each week.

Welcome to my blog! Let's bake!
Please have your first orders in by June 1st! Options this week include baguettes, rolls, round loaves (French, avocado and sunflower seed, walnut and maple syrup), sandwich loaves, fancy table loaves for dipping and such, and flatbread. All of these are $4 a piece. When you post your order, include any allergies as well as which day is most convenient for delivery or pickup (weekdays = after 5pm, weekends vary). Keep checking back for more posts on ingredient origins and questions concerning your product preference! If you want me to make something not listed here--let's do it!
